Beets Microgreens Salad Recipe
2 cups of mixed greens (spinach, arugula, lettuce, etc.)
1/4 cup of beets microgreens
1/4 cup of chopped walnuts
1/4 cup of crumbled feta cheese
1 small red onion, thinly sliced
1 avocado, diced
1/4 cup of balsamic vinaigrette dressing
Salt and pepper to taste
Start by washing and drying the mixed greens and placing them in a large bowl.
Add the beets microgreens to the bowl, followed by the chopped walnuts, crumbled feta cheese, thinly sliced red onion, and diced avocado.
Drizzle the balsamic vinaigrette dressing over the top of the salad and toss gently to combine all the ingredients.
Season with salt and pepper to taste.
Serve and enjoy!
