Chipotle Fajita with Microgreens

To make these fajitas, you will need the following ingredients:

  • 1 lb. of your favorite protein (skirt steak, chicken breast, chicken thigh

  • 1 red bell pepper, sliced into thin strips

  • 1 green bell pepper, sliced into thin strips

  • 1 onion, sliced into thin strips

  • 1 tbsp. of olive oil

  • 1 tsp. of ground cumin

  • 1 tsp. of smoked paprika

  • 1 tsp. of garlic powder

  • 1/2 tsp. of salt

  • 1/4 tsp. of black pepper

  • 1/4 cup of chopped cilantro (or cilantro microgreens!)

  • 1/4 cup of chipotle sauce (store-bought or homemade)

  • 1/2 cup of your favorite microgreens (ours are Sunflower, Radish, Broccoli, Beets, or Power Punch)

  • Tortillas (flour or corn)

Instructions:

  1. In a large skillet or wok, heat the olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned and cooked through.

  2. Add the sliced bell peppers and onions to the skillet with the chicken. Cook for an additional 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

  3. While the chicken and vegetables are cooking, make the chipotle sauce. In a small bowl, mix together the chipotle sauce, cumin, smoked paprika, garlic powder, salt, and black pepper.

  4. Once the chicken and vegetables are cooked, add the chipotle sauce mixture to the skillet. Stir to coat the chicken and vegetables evenly.

  5. Turn off the heat and stir in the chopped cilantro.

  6. To assemble the fajitas, heat the tortillas in the microwave or on the stovetop. Place a few spoonfuls of the chicken and vegetable mixture on each tortilla, and top with a handful of microgreens.

  7. Roll up the tortillas tightly and serve immediately.
